Hi Niall, Caisc shona duit! Getting together with my wife's family this weekend for much eating, drinking and general merriment. Too much I suspect. We often cook a ham for the occasion flavored with maple syrup, a personal favorite of mine for Easter dinner. Sugar Maple trees of course grow in great abundance here and the sap is gathered in the early Spring. I must also confess it is the custom of our people during this holiday season to consume large quantities of chocolate easter eggs. Appreciate the photos of the Island; ancient ruins have always been a favourite with me when I travel to the British Isles. Even more so when there is a historic link with our Maconlea ancestors.
